This is not a new concept…
Not my recipe or anything, but just literally something I have started making to fill the void of sweets my heart {and stomach} had because sometimes you just need a cookie to get through those 2-year-old tantrums or the 5 going on 15-year-old’s sass.
Easy is an understatement, but finding something sugar free to replace all my typical sweets was going to be difficult {I thought}.
Until I looked on the bottom shelf at Walmart on the baking aisle, and saw boxes of sugar free cake mix & quick bread/muffin mix.

So for cake mix cookies…
•box of cake mix of choice {obviously I use sugar free Pillsbury mix}
•1/3 C vegetable oil
•2TB water
•2 eggs

Mix together and then throw in your add-ins!
I use sugar free Hershey chocolate chips, sometimes add cocoa powder for chocolate cookies, sprinkles, etc.
Scoop out onto parchment paper & bake at 375 degrees for 7-10 minutes. Totally depends on how large of a scooper you use!
Mine are larger, so sometimes I even go up to 11 minutes.
These also don’t make me feel so guilty when my kids ask for their 1,123rd snack of the day.
